Vietnamese cassava & corn fritters




Ingredients

-2/3 C 
tempura flour or 1/2 C rice flour
-1 pkg of frozen grated cassava (16 oz bag.)
-2 C fresh corn kernels or 2 cans of canned corns or
 1 pkg frozen corn (1 lb. bag)

-11/2 tsp baking powder
-2 T curry powder (more or less depending on taste)
-1 t salt + 1 T sugar + 1/4 t  black pepper
-1 T chopped chilies
(more or less depending on taste)
-1/4 C chopped green onion
-1/4 C -water (gradually added)

Preparation

1. Grate corns coarsely in a food processor.

2. Mix all ingredients in a large bowl until well blended.  Add water gradually as needed.

3. Wait for about 20-30 minutes before frying. Take spoonful of the mixture,  drop them in hot oil, and deep fry until golden brown (about 3-5 minutes).
