Cape Verde Jag
½ onion
¼ cup olive oil
2 cups water
1-tablespoon salt
1-teaspoon paprika
2 chicken bouillon cubes
1 bay leaf
1-cup rice (golden canella or Uncle Ben is best)
1 package frozen baby lima beans
Sauté onion in olive oil until golden brown. Add water, salt, paprika, bouillon cubes, and
bay leaf. Bring to full boil. Add rice.
Let boil. Add lima beans. Stir after 15 minutes. Recover and cook on med-low until done
(approx ½ hour).
