Tortellini Temptation

 

(serves two)

 

 

Tortellini

4 oz of Barilla or American Beauty tortellini (found in the pasta section)

2 tbsp olive oil

2 tbsp pesto

 

Salad Ingredients

4 oz of fresh spinach leaves

½ cup gorgonzola crumbles

½ cup raisins

1 lb cherry or grape tomatoes

¼ cup carmelized ‘Almond Accents’ shaved almonds

2 cups red grapes

1 chopped pair

 

Directions: Boil saucepan of water.  Follow directions on tortellini packet or boil tortellini for 10-15 minutes (al-dente) stirring occasionally.  While pasta is cooking, combine salad ingredients in a bowl.  Warm oil in skillet a few minutes before pasta is done.  When pasta is done, drain and immediately place in skillet with pesto.  Saute for 2-3 minutes.  Pour pasta mixture into salad and mix, warming spinach.  Serve and enjoy!
