MUSHROOM GRAVY

This is an alternative to the traditional gravy made with meat residues.
 
1 tablespoon butter
8 oz sliced mushrooms
1 tablespoon olive oil
2 cloves garlic, crushed and chopped
1 cup stout ale (Guinness, etc)
1/2 cup chopped onion
Salt and fresh ground pepper to taste
2 tablespoons flour

METHOD

Heat butter and oil in a small pan until butter stops bubbling. Add vegetables and stir for a couple of minutes until onions are soft. Sprinkle in flour and mix well. Add beer, stirring all the while until gravy is hot and thick. Add more beer for a thinner gravy.

The quantities are not set in stone for this recipe - adjust according to taste. You can also add more spices such as celery salt, paprika, oregano to taste.
Serve over veg cutlets, roast veg, etc. Serves 2-3.
