Ingredients (for 4-6 people)
-2 cups sweet rice
-2 chicken breast marinated with 2 T of Chinese roast chicken powder + 1 T oyster sacue + 1 T sesame oil (optional)
-1/3 C fried red onion
-1 T soy sauce or to taste
-1/4 black pepper
-1T shredded green onion (optional)
Preparation:
1. Soak sweet rice in warm water + 1 T salt for at least 3 hours, then drained.
2. Mix 1 T salt with the rice and steam with medium heat for about 30
minutes or until soft and cooked.
3. Marinate chicken for at least 30 minutes, then put chicken in a
non-stick skillet, add 1 T fried red onion, cover the lid and cook in low
medium heat for 15-20 minustes or until cooked.
4. Check often to make sure the chicken is not burned. If there is too
much liquid in the skillet, open the lid and cook for 5-10 minutes more
so most of the liquid is evaporated.
5. Let the chicken cool for 10-15 minutes, then shred the meat with
hands or forks. Fry shredded green onion with 1/2 T
oil for couple minutes, then mix with cooked chicken.
6. Add shredded chicken to the cooked sweet rice. Mix well and
add black pepper and soy sauce to taste. Top with fried red onion.
7. Serve hot.
